Probably also unlikely for financial reasons, but if any sort of cornchips/dip deal was on the menu: using fresh chips. I'm not quite sure how they're made, though.. probably by deep-frying fresh corn tortillas.
I guess if the restaurant isn't mexican, you probably wouldn't have enough demand for such an item to warrant the hassle... but so good! When we went to Taco Taco in New York, they brought us a couple baskets of fresh chips, and it really made the meal.
