I may have mentioned this before but sandwiches are one of my favorite foods and after reading this book I've been inspired to start small in the restaurant biz since I have no concievable way of actually buying a whole restaurant anytime soon. So here's the plan, I'm gonna buy/build the ultimate sandwich wagon, it'll be like a chip wagon only with wicked gourmet sandwiches, I could probably start this sort of thing right out of school or soon after which would be a boon. (hehe... "boon"). The only issue is of course that street vendors are a dying breed, appanrantly there aren't that many places that allow them anymore and the places that do have them are trying to get rid of 'em. More research will be required... I suppose I could always open a small cafe that sold great sandwiches or even a take-out sandwich counter somewhere but I like the idea of being able to motor around when necessary. I imagine the initial costs for a sarnie-mobile would be a little lower than for a chip-wagon since fryers are more costly than sandwich presses.

A yummy panini or grilled-cheese is mega-yummy, but falls far behind a good bowl of pasta or even a rice dish. I've never understood peoples' enjoyment of sandwiches - when younger, I almost never brought a sammich to school for lunch, and at home I only ever eat them as a snack.
